“I got rice cookin’ in the microwave…”
I never understood this, until about a year ago.
How many times did I sing-along with Travis Tritt’s “It’s A Great Day To Be Alive,” while also privately mocking the idea of…cooking rice in the microwave? (Okay…sometimes not so privately. I MAY have mused about this a time or two – on the air. Before thousands of listeners.) “WHO COOKS RICE IN THE MICROWAVE???”
And then I GOOGLED IT. Why? Because:
Summer in Flagstaff is wonderful, yes. Cooler than the “Valley of the Sun,” yes. But in my older, East-side home, THERE IS NO A.C. So, unless I am vigilant about opening and closing windows with every shift in outside temperature and humidity (and running noisy box fans in every room,) when it is 80 degrees outside, IT IS 80 DEGREES IN MY HOUSE.
And…since I can’t stand the heat, I stay out of the kitchen. Literally. Cooking with the stove or oven seems to add that 1-2 degrees that push me over my climate-tolerance threshold. Not doin’ it. But, apparently, my family needs to eat. Like…EVERY DAY.
And, as luck would have it, You CAN cook rice in the microwave!!!
Thank God – and Travis Tritt -for Summer supper solutions. Enjoy.
